Foodie Friday: BBQ

What North Carolina summer is complete without barbecue?  Special Collections holds dozens of Cooperative Extension publications that extoll outdoor barbecuing.  A 1955 pamphlet (below) for barbecuing poultry was recently digitized under our current project.  Interestingly, it stated that outdoor eating was gaining in popularity during the 1950s, and that "everyone likes it."

This publication clearly expected large numbers to attend barbecues, with menus for up to 500 people.  Of the two sauce recipes that it contains--one called "all-purpose," the other "mild"--only the latter includes tabasco or red pepper.  Try either the next time you entertain a (large) crowd!
